Chicken Liver

I'm eating chicken liver because it's  is a good source of iron, for my low blood iron levels.  Iron supplements cause intestinal irritation for me so I can't take them.  Even Flintstones chewable tablets are too much for me. Besides, I like the way chicken liver tastes.

"Ingredients:
  • 4 chicken livers (remove the tough tendons if you’re finicky)
  • 1 tablespoon olive oil
  • Kosher salt
 Cook the chicken livers:
Heat the oil in a small fry pan over medium-high heat until shimmering. Add the livers and sprinkle with a three finger pinch of salt. Cook until well browned on the bottom, about three minutes. Flip the livers, an cook until well browned on the second side and the pink color is entirely gone in the middle, about three more minutes. If the livers are browning too quickly, turn off the heat and let them finish cooking in the residual heat of the pan. Remove from the pan and serve."

  1. I feel the same way about liver as your wife does! My mother use to make it regularly when I was a kid and I didn't like it then either. But if you like it and it helps, that's great!

  2. We make a chicken liver pate with onions, and cream cheese. It is terrific and never lasts long around here. Even those who don't like chicken livers like it. The livers are put through a blender before being fried with onions and a little olive oil. If you wish I can get you to complete recipe.

  3. Hi John :) I LOVE liver!!! My favourite way to eat it is chopped liver. I have never tried to make it at home, but my favourite Jewish delis used to have it and it was perfect. I think it's just mushed up liver mixed with caramelized onions but I definitely would like to try this at home soon. We could all use a little more iron in the blood.

  5. Oh my goodness, liver! My mother used to good those sort of things when I was a child including sheeps brains done it white sauce - yes, I used to eat them but not these days.

  7. My mother used to fry beef liver every once in a while for health reasons. I could eat it only if it was SMOTHERED in fried onions.

  8. I always liked liver too (beef or chicken), but don't eat it anymore as DH doesn't even like the smell of it. But my mom used to make liver smothered in onions and grits when I was growing up and I loved it.

  9. I don't care for beef liver but poultry livers are far more delicate in flavour. They definitely need salt to taste their best :) When we cook our turkey at Thanksgiving and Christmas, the liver is a treat we share.

  10. my parents and sister and brother loved it but i am hard on eatings ,milk and meat were disliked by me
    thanks to hubby who made me eat chicken (not liver i throw it ) and makes me drink milk as i am also great anemic patient
