Pan-Fried Salmon

I found a recipe I can easily cook! Last time I partly burned and made as tough as leather a chicken dish cooked in our pressure cooker. This time I was successful with cooking salmon.

It smells good as it is cooking and tastes great. Next time I'll let the fish defrost for a longer time so I won't have to return it to the pan.

Here's the link where I found the recipe:

  2. I (and I'm the only one in our house-hold - except for the cats) love Salmon! Since I cook it only for myself (and do share with the cats), I simply put butter, parsley, salt and pepper on it, wrap it in reynolds wrap (aluminum foil), and put it in my 450 F Aga oven for 10 minutes on the low shelf. Then I open up the foil, and put it on the top shelf for 10 minutes. Comes out perfect!

  3. A pressure cooker is tricky to manage - every minute in one equals much longer than a minute of cooking. No wonder you had trouble with your chicken!

I'm glad your salmon turned out well. This is basically how I cook it too. Another way to ensure it doesn't dry out is to add about 1/4 c. orange juice to the pan when you begin to cook it. The juice will keep it moist while it cooks, but it dries up by the time the fish is done. Gives it a nice flavour, too.

    1. What a great idea about the orange juice! I'll have to keep that in mind. Thanks!

    2. John & Martha - I forgot to add that I use very little oil - just a spray in a non-stick pan, and the orange juice basically steams/poaches the fish, depending on whether you cover it or cook uncovered. It's a great way to make it lower fat.

  4. This is how I usually cook my salmon. It's simple and delicious. Sometimes I place it in the oven; also very tasty.
